Here's what I think I want so far:
Intel Core i7 920 Processor BX80601920 - 2.66GHz, LGA 1366, 4.8GT/s QPI, 8MB L3 Cache, Quad-Core, HyperThreading, Bloomfield
Antec P183 case
Antec CP-1000 power supply
I have no idea what graphics card, motherboard or ram to get. any suggestions for the rest or thoughts on what I'm already thinking of getting would be appreciated.
And, can you build a dual quad core machine?

you can build a dual quad core machine but it limits the number of graphics cards to 1 for the most part and the mobos are pretty pricey. they do come with like 16 ram slots though.

Macs have dual quad cores no? I'm currently using a AMD X2 5000+ dual core. Let's say a render takes 1 hour. How long would the same render take with the 920 i7 ?

probably like 10-15 minutes.
EVGA Announced a dual 1366 socket motherboard with 7 PCI-x slots and eight RAM slots at CES this year, I would expect those to hit the market by the middle of the year, with a price tag around $500.

Id recommend the EVGA LE board:
http://www.newegg.com/Product/Product.aspx?Item=N82E16813188049&cm_re=EVGA_X58-_-13-188-049-_-Product
or its smaller cousin if you want to make a SFF computer:
http://www.newegg.com/Product/Product.aspx?Item=N82E16813188051&cm_re=EVGA_X58-_-13-188-051-_-Product
xfx products tends to be shit, and EVGA's customer service/reliability/quality is top notch.

If you're in the US, I have a couple 4890's that I'm selling, $175+shipping per. They'll do better than a 250 for you.
